Chicken Thyme and Garlic

chicken breast casserole photo: Country Chicken Casserole large_24569.jpgI was beside myself on how to prepare a defrosted skinless boneless chicken breast. Spices are truly a life saver to any recipe. So:

Ingredients:
Chicken breast
Salt
Pepper
Thyme
Garlic (fresh chopped finely or dried)
Green Beans
Potato (unpeeled but scrubbed)

Instructions:
I used a 9x13 baking dish, dribble oil in bottom. Slice potatoes place in bottom of dish, sprinkle with salt and pepper. Top with green beans (I used frozen french cut). Add sliced, cubed, whole (whatever way you want) chicken. Sprinkle with salt, pepper, thyme (and be careful with thyme, it is a full bodied spice/herb) and garlic. Add a dribble of water around sides of dish just til visible. In a preheated oven 350, bake uncovered 1 hour (or more). It's the potatoes that take a long time.

I served with fresh bread and butter.

WAIT! There's left overs.

Lots of leftovers from Chicken Thyme & Garlic. Depending on how you prepared the chicken (cubed, whole, sliced) cube the chicken. With 2 knives, cut through beans and potatoes to make pseudo stuffing. You don't want it mushy but smaller than slices and whole beans.

Prepare pie dough. Again depending on how much leftover you have, 1 pie crust or 2. Decisions, decisions. You can make a big pot pie and use a standard sized pie plate or a deep dish pie plate. Or, you can roll out the dough and cut it into squares and place CTG into each square, folding and pinching the sides firmly so filling does not fall out.

More decisions. If a pot pie, bake 325 til crust is golden. Probably 45-60 mins. Or, if squares, place on cookie sheet and bake 350 til crust is golden. I'd say 30-45 mins. Or, pan fry. Heat oil in non-stick pan large enough to hold at least 2 squares. Heat oil to medium high. Brown side 1 then flip and brown side 2. Once browned reduce heat to medium low, cover for filling to heat through.

You can brush melted butter, egg or even an oily salad dressing on crust before baking no matter what method you use.

Should be good, no very good, no LUSCIOUS!
