Pork Rolls

Ingredients:

Boneless Thin Cut Pork Chops (or cutlets)
Sharp Cheddar Cheese (cubed or shredded)
Rice Pilaf (I used Zatarain's Broccoli and Cheese)
Broccoli (fresh or frozen florets)
Diced Fresh Tomato
Salt
Pepper

Instructions:
Cook rice just short of the time called for per package instructions. You want some liquid, rice will finish cooking in the oven.
Place thin slices of cheese along with the smallest broccoli florets on pork chops, salt if desired (Cheese, for us, is salty enough and needs no more, not the mention the packaged rice) but I always pepper, Wrap tightly and skewer.
Brown rolls in hot frying pan with scant oil.
Place cooked rice in bottom of baking dish. Sprinkle some cheese on top.
Place broccoli florets to cover rice. Sprinkle more cheese on top.
Place browned pork chops on top, cover and bake 30-45 minutes. There should be enough liquid to come to a boil.  Half way through cooking time, sprinkle more cheese on top.

Certainly you can spice this dish up with almost anything you choose. Basil, oregano, garlic ... Was feeling very plain.

I served with fresh bread and butter.
